Baked Salmon with Udon Noodles Kitchen preparation: Preheat oven to 375 degrees. Bring 3 quarts of water to boil. Ingredients: (4) 5 oz Wild Alaskan Salmon Steaks 16 oz (1lb) Japanese Udon Noodles 1 cucumber sliced julienne 1 diced yellow bell pepper 2 chopped green onions 1/2 cup shelled Edamame 4 tbsp Fresh chopped cilantro 2 tbsp olive oil 1 tsp sesame oil 1 tbsp soy sauce Juice of 1/2 lemon Sauce for Fish: 1/2 cup mirin 1 tsp tahini 1 tbsp yellow miso 1 tbsp low sodium soy sauce 2 tsp fresh grated ginger Place fish steaks in a casserole dish or cast iron skillet. Cover with Miso sauce. Bake at 375 for 15-20 minutes careful not to overcook. Cook Udon for 5-7 minutes. Drain and toss with olive oil, sesame oil, soy sauce and the juice of 1/2 lemon. Add cucumber, bell pepper, green onion, edamame and cilantro. Serve salmon steaks on bed of noodles. Enjoy! |
